Yeah! I know… I think April was my last post.

This one is gonna be a good ole’ recipe. 🙂

At the local farmer’s market, they sell a Cucumber salsa that has tomatoes and recently I found that tomatoes are a gout trigger for me. So… I decided to try and replicate the recipe without tomatoes.

Here it is…

Cucumber Salsa ingredients.
  • 1 Large Cucumber
  • Fresh Dill
  • Fresh Cilantro
  • Fresh Mint
  • 3 Fresh Green Onions
  • 1 Red Bell Pepper
  • 1 Tbls White Vinegar
  • 1 Tbls Lemon Juice
  • 1 Tsp Minced Garlic

Dice and mix. Put in the fridge for a few hours to mingle and chill. Then put it on everything. 🙂

This is a great summertime salsa you can have on most anything. It is fresh and crazy good. I suggest mashing som avocados and mixing this in. 😀
